Sandwich with Myzithra cheese, pears and walnuts

Very tasty this sweet and savoury sandwich which can satisfy your appetite in the best way! Ideal for vegetarians too and for those who don't want to consume too many calories in snacks. Ingredients (for 6 people):
2 baguettes
2 ripe but firm pears
3 tbsp of sweet red wine
300gr. of Greek fresh Myzithra cheese
60gr. of roughly chopped walnuts
3-4 sprigs of flat-leaf parsley
1 tsp of butter
salt
pepper

Method:
Peel the pears and cut each one into thin slices. Put in a bowl along with the wine and marinate for 2-3 minutes. Drain the pears and keep the wine aside.

Put in a blender the Myzithra, the wine, the parsley, pinch of salt and the butter and whiz until they become a creamy mixture.

Cut each baguette first into 3 pieces and then each piece in half (lengthwise). Equally spread some of the creamy filling on both sides of the bread.

On top garnish with the walnuts, the pear slices and sprinkle with pepper. Close the sandwiches and serve immediately.
