Fast and easy Summer tart with cherry tomatoes, pesto and two cheeses

Here things are really easy and simple and this is what we need on a hot Summer day. To prepare something without too much trouble and having something tasty and filling on our plates at the same time. Serve this tart as a first dish or light meal along with some crispy green salad. Substitute, if you want, the Kefalotyri cheese with parmesan or pecorino. Both suit the rest of the ingredients very well, each one giving a different taste. You can, also, substitute the Anthotyro cheese with fresh mozzarella. Green or red pesto, again, are suitable depending on your preference. The original recipe demands a type of pastry we have in Greece called "Kourou". The closer to this is the classic shortcrust pastry which doesn't lack taste at all

Cretan "Dakos" topped with fried egg

The traditional Cretan barley rusks this time with the addition of a fried egg on top to enjoy for breakfast, as a first dish or a light meal. Dakos traditionally is topped with Cretan "Xynomyzithra" cheese which is a European protected designation of origin cheese. It is a traditional, unpasteurized fresh cheese, a sour variant of "Myzithra". It is made with milk and whey from sheep and/or goats. The Xynomyzithra comes in various sizes and its shape is usually a truncated cone or ball. It is soft, snow-white, creamy and moist, with a sour taste

Mum's classic recipe for ground meat sauce

This classic ground meat recipe from the Greek cuisine is, in a way, the equivalent of the Italian "bolognese" sauce. There are of course differences between them, as you will see, but the principle is the same. More or less everybody follows the same technique and ingredients with minor differences here and there, mainly regarding the spices or the herbs used in the recipe. This is a rather simplified version of the recipe which my mother follows for years, as her mother did before her. I follow the same recipe but often I enrich the sauce adding mild spices like ground cinnamon and/or allspice to give an extra flavour and a couple of bay leaves. The sauce can be used in so many different recipes, it's not only meant to top your pasta dishes with it. In Greece we use it to fill various vegetables, like aubergines, tomatoes and peppers with it, the same goes for the Moussaka and Pastitsio dishes of course where the meat sauce is one of the main ingredients. Not to mention that when there are any leftovers, another day you can create a whole new dish using up the meat sauce as a base for omelettes, rice pilaf, in various tarts and pies, even in sandwiches for a different version of the luscious "Sloppy Joe" sandwich. So, it is not only a delicious recipe but also very practical so don't hesitate to cook a large quantity and freeze it accordingly

"Sfougatto" omelette with courgettes and two cheeses

This is a classic and traditional Summertime dish of the Greek cuisine, which can be found in various areas of the country but surely it is a popular dish in the islands. Simple but tasty ingredients come together perfectly for this kind of omelette which can be served as a brunch or light meal. There are no special tips about it except that the courgettes need to be fresh and tender for better taste and the eggs as fresh as possible.
