Light moussakas with yoghurt and egg topping
A different version of the popular Greek dish but still so delicious! The vegetables are not fried but roasted. Beside the aubergines, courgettes (instead of potatoes) are added in this recipe and instead of the classic béchamel sauce a mixture of yoghurt and eggs make a nice golden crust on top

Peach ice cream
An ice cream that is really worth the trouble and your time! Refreshing, fragrant and luscious it will be the ideal dessert to end a dinner. You can always substitute the peaches with apricots, nectarines or plums. If there is something I have to point out about this recipe is that, personally, I found the amount of vanilla too much. I felt that it overtook the aroma of the peaches. So, next time I'm planning to omit the vanilla or to use half of it so to balance the flavours better. But this, of course, is a matter of personal taste, you do as you please

Courgette pie with ground beef
I haven't put a pie recipe for some time now so I think that this one is a good example of how you could enjoy the courgettes now that they are still in season. A little bit different than the classic Greek courgette pies since it is enriched with some ground meat. This makes the pie even tastier and quite filling so to make it a main meal along with some salad. Because of the large quantity of liquids the courgettes have, the secret to avoid the pastry to become soggy and keep it nice and crunchy on the bottom of the pie is a) to use an (old fashioned) aluminium oven pan and b) to brush the bottom of the pan with oil very well! I know that nowadays most of us have thrown away these type of pans but in some cases they are still useful. Trust me, the traditional bakers still make their pies in such kind of pans and they know why...

Upside-down tart with tomatoes, caramelised onions and olives

Potato fritters with Manouri cheese
