Stuffed aubergines with bulgur and herbs
A different but very tasty version of stuffed aubergines which will please you and the family. We get away from the classic version of the onion or the ground beef stuffing and we use bulgur instead, full of aromatic spices and herbs for extra flavour. The Greek "Tsakonikes" aubergines (or the Japanese variety) are ideal for this recipe but the classic plum aubergines work well too

Tart with fresh figs and lemon marmalade
Figs are in season and in this recipe they go perfectly well with the lemon marmalade enjoying a very tasty fruit tart! You can substitute the lemon with a 3 citrus fruits marmalade or with some sweet/sour "dessert spoon" sweet like bergamot orange (300gr.) which you will mash first in a blender. If you can't get bothered with the home made pastry you can always use store-bought shortcrust or puff pastry

Moustokouloura - Crunchy grape must cookies
These are one of the so many different types of cookies we have in Greece. Ideal for your tea and coffee or a healthy snack for the kids! Now it's really their season because of the grape must people gather after harvesting the grapes. Grape must is made using the juice squeezed from fresh grapes. In Greece, large quantities are gathered during the September grape harvest, and it's a great project, pure and natural! It also freezes well and can be used throughout the year. Try out these lovely, crunchy and fragrant must cookies, they are really worth the effort whenever you can find must. There are a few varieties of the recipe, this one gives you more crunchy than soft type of cookies

Melon and watermelon salad with feta cheese mousse

Baked aubergines stuffed with walnut/garlic dip

Baked swordfish fillets with lemon and spearmint
Our family is not a big sea food and fish lover but there are fishes we like more than others and one of these is the swordfish. In general we prefer either the big fishes which can be cooked whole or in slices or those which are very small and they can be eaten without the hassle of de-boning while eating...:-)) Swordfish is one of our favourites because it is quite meaty and we find it very tasty. Here with a simple way of cooking we have a delicious meal which can be served with fresh salads or Summer greens (horta). Instead of the spearmint, fresh or dried sage can also be used or parsley. The same recipe can be followed using other kind of fish fillet, that's up to you. It is not essential to marinate the fish but in my opinion it is strongly suggested because it gets a special flavour

Multi-purpose feta cheese cream
Just a few ingredients are needed to make this really versatile and delicious smooth cream! It is great to spread on toast bread or rusks. To serve on a classic tomato salad, on chilled or warm tomato soup, to accompany Summer vegetable dishes like stuffed vegetables, beans, okra or peas stew and also to accompany various recipes with dried pulses (soups or salads). The feta needs to be medium salted so better if you soak it from the night before in a bowl filled with water and discard the next day

Refreshing "millefeuille" with marinated courgettes and cream cheese
Simple ingredients which can be used in such a way to create a refreshing and delicious in taste but also impressive in looks first dish! I have tried the recipe in its original version but I have also used spearmint instead of dill, the result was different but still very tasty. The original recipe demands the elegant Greek "Katiki" cheese which I have mentioned to you before but of course I don't expect you to find it abroad (unless you are lucky enough!). So, any soft goat's cheese can be used instead
