Beef slices stuffed with feta cheese and fresh spearmint

A very tasty, family-friendly and good looking dish which will impress everybody! It goes perfectly well with rice pilaf or fries

Ingredients (for 4-5 people):
1Kg of beef (preferably topside cut)
1 yellow onion, finely chopped
1 tea-cup of feta cheese, crumbled
2 tbsp of flat-leaf parsley, finely chopped
2 tbsp of fresh spearmint leaves, finely chopped
2 tbsp of garlic, mashed
1/2 tea-cup of white dry wine
1/2 tea-cup of olive oil
1Kg of ripe tomatoes, grated
1 tsp of sugar
salt
black pepper

Method:
First, place the meat on a chopping board and using a sharp knife cut it into 3cm slices. Then slide the knife into each slice so as to make a pocket and leave aside.

In a bowl put the feta, the parsley, the spearmint, the garlic, 1 tablespoon of the olive oil, salt and pepper and mix the ingredients well with a spoon.

Stuff each pocket with some of the stuffing and use a toothpick to secure the opening of each meat slice.

In a large and wide casserole-type pan warm 2 tablespoons of the oil on medium-high heat and sauté the meat for 3 minutes on each side until it is nicely browned. Add the onion and sauté until it becomes translucent.

Pour over with the wine and leave the food until the alcohol evaporates. Season with salt and pepper, add the sugar, the tomatoes and the rest of the olive oil in the pan and cover with the lid.

Turn the heat down to medium-low and simmer -without adding any extra water- for 1 h 30 min. until the meat gets really tender and the sauce thickens.

Serve while it is still hot along with rice pilaf or fried potatoes.
