Orzo pasta with spinach, Feta cheese and wine
A nice recipe to cook the orzo and have something light but still filling at your table. Although orzo is a type of pasta, in this recipe it is handled as if we'd cook a risotto. Meaning slow cooking in low heat and that makes it really tasty and creamy in the end

Cretan Dakos - Tasty barley rusks
This is a light but so refreshing and delicious dish coming from Crete and it is called "Dakos" which in a way means "pile up". We do like barley and other types of rusks in Greece and this is a very quick and tasty dish which can be served as a first dish or even instead of a salad (individually), even if you have it with just a bit of feta cheese on top. In Crete though it is a traditional recipe and now it has become quite famous outside the borders of this beautiful Greek island. Good quality of olive oil and the Cretan Xinomyzithra cheese are the secrets

Strawberry and yoghurt pudding
Now the strawberries are really in season and it is a good chance to take advantage of this luscious fruit to create some tasty recipes. And since the weather gets warmer (where I am very sloooowly but anyway) what a better idea than a light and chilled strawberry pudding! Served in individual ramekins or a bundt cake tin for a more impressive presentation- the sure thing is that your guests will really enjoy this dessert. If you have any other type of red berries in hand go ahead and use them. Not only will they give to the dessert a more intense red colour but they will enrich the taste as well

Cinnamon biscuits with almonds and Stevia
Tasty and easy biscuits to make and have available at home for all hours! Using Stevia instead of sugar makes them more accessible, without lacking in taste at all, to those who look after their weight but most importantly to those who have diabetes problems. A natural sweetener without any calories, substitute to sugar and the various synthetic sweeteners, Stevia helps us to feel no guilt and enjoy sweet recipes without any sugar involved. The ratio is about 1gr. of Stevia to 8-12gr. of sugar, which means that we use 8-12 times less quantity of sugar, depending on the recipe. Definitely something many of us should give a good thought about...
