Mixed chicken and turkey biftekia (Greek burgers) with thyme and ginger

Lighter in calories but still very tasty Greek-style burgers, nicely herbed and spiced! Enjoy them as a main meal (like the Greeks usually do) along with a salad and fries or as classic burgers in a bun with the trimmings of your choice

Ingredients (for 4 people):
750gr. of mixed ground chicken and turkey (legs and breast meat)
1 medium courgette, grated
1 medium carrot, finely grated (optional)
1 tbsp. of olive oil
½-1 tsp of dried ginger (or 1 ½ tbsp of fresh grated ginger)
1 tbsp of dried thyme
½ a bunch of finely chopped flat-leaf parsley
1 tbsp. of malt vinegar
2 egg whites
salt
pepper
Method:
Put in a large bowl add the courgette, the carrot (if used), the meat, the oil, the ginger, the thyme, the parsley, the vinegar, the egg whites and season with salt and pepper.

Knead with your hands well to blend the ingredients, wetting your hands in cold water often so the meat won't stick on them.

Shape the mixture into 8 medium-size biftekia and place them in a greased oven pan. Put the pan in the freezer for 20 minutes to allow the meat to firm up a bit.

In the meantime, preheat the oven to 200°C.

Transfer the biftekia in the oven and cook for about 15-20 minutes, until they are cooked through but not dry.

Serve while they are still hot along with a salad and fried potatoes..

Note:
You can also cook in a cast iron skillet, under a hot grill or over hot coals.
