Red Florina peppers salad with Feta cheese

It is called a "salad" but in reality this is a dish which should be served as a first or meze dish to enjoy along with some chilled wine. Very easy to prepare, full of taste and the best company for it is toasted rustic bread. The Florina peppers with their distinctive aroma and taste are the best choice but red bell peppers or the Spanish sweet "horn" peppers can be used as well

Ingredients (for 4 people):
500gr. of medium-size red Florina peppers
3 cloves of garlic, cut in thin slices
1/4 tea-cup of white or red wine vinegar
150 gr. of Feta cheese, crumbled
1-2 tbsp. of finely chopped flat-leaf parsley
frying oil

Method:
Wash the peppers well and dry very thoroughly.

Warm the oil in medium heat and fry the peppers on both sides (whole as they are) until their skin bursts in various spots. *** The oil should not be too much, just enough to shallow fry the peppers with some left in the pan for the dressing.

Take the frying pan off the heat and pour over with the vinegar. Take back to the heat for another 2-3 minutes and then leave aside to cool down.

With a sharp knife score the peppers lengthwise and take their skin off. Transfer the peppers on a serving plate and cut into long thin strips.

Add the garlic into the pan juices and cook in low heat for 2 minutes, stirring with a spatula.

Pour the peppers with the hot dressing and scatter on top with the Feta cheese. Sprinkle with the parsley and serve immediately.
