The idea maybe is not as traditional as other Greek recipes in the blog but most of the ingredients definitely are. Normally we would use the long version of "hylopites". A special type of pasta which is very popular in Greece and resembles a lot the italian "tagliatelle". A delicious recipe which will keep yours and your guests' interest high until the last bite

Little savoury pies with nettles, spearmint and myzithra cheese
Home made phyllo for these little traditional pies makes them even more delicious. Little pies like these are always welcomed at home since they can be served anytime and in any occasion or season. Nettles are not the most popular or common ingredient for pies in Greece but lately I discovered that there are actually many traditional recipes around Greece using this, not so famous, green

Fried whitebait-smelt fish
Deep fried and crispy "Marithes" fish... An excellent (mainly Summer) meze for your ouzo or wine. Whitebait-smelt is a very popular and standard dish in the menus of ouzo bars and fish taverns all around Greece and not only in the islands. The smaller the better and it's then when they don't need to be gutted and take the heads off. They are eaten whole, literally whole!! If they are less than 5cm long they are considered as "whitebait" but longer than this they do need the classic cleaning and gutting

Sweet crustless cheese pie
This is a delicious and light traditional sweet pie which in some areas is served as a first dish and not as a dessert. It can be found with different names depending on the area it comes from. The specific version comes from the Aegean Sea island of Syros and you could also call it "sesame pie". In some islands this pie is considered as an Easter delicacy

Kasseri cheese pie with kataifi pastry
The "Kasseri" cheese is a very popular traditional cheese in Greece which though, can be found in other Balkan countries and Turkey of course. It is a very tasty pale yellow, medium-hard cheese with a quite characteristic flavour. It is made from unpasteurized sheep milk and with very little, if any, goat's milk mixed in. The texture is rather creamy, more stringy than crumbly, a bit chewy and belongs to the same family of cheeses with the Italian "Provolone". Actually, the first time I had the mild Tesco-own (chain of Super Markets in the UK) cheddar cheese reminded me of the Greek Kasseri. The name "Kasseri" produced in Greece is a protected designation of origin in the European Union. "Kasseri" can be used in various ways in Greece. We love having it sliced in fresh or toasted sandwiches because of its ability to melt nicely and as the main ingredient in the "Kasseropita pie", fried in the classic "saganaki" dish and in various omelettes. The following recipe is the most common and most popular of the pies where Kasseri cheese is involved and it can also be made with the classic phyllo pastry sheets or even puff pastry
