"Like mum's" classic braised beef with potatoes in tomato sauce - A humble tribute to mine and all mothers of the world!!!

First of all HAPPY MOTHER'S DAY to all mothers!!!! I'm not sure if this special day is celebrated the same date everywhere but it doesn't matter. A big thank you to every mother never goes wasted no matter the day, the date, the occasion or the season! There were so many recipes that I could cook today that reminds me of my mother and of her effort to please her family with a nice, homecooked Sunday meal but this recipe came first to my mind and all the flavours and aromas bring back happy childhood memories. This is a classic and especially popular Sunday meal recipe for almost every household around Greece regardless the season and although the ingredients are simple the final result is delicious! To my mother then and all of you who have done so much for all of us!!!!

Braised beef cooked in two wines and citrus sauce

This recipe is a good example of what "comfort food" means to me during the Winter months! Tender beef slowly cooked in a luscious wine and citrus sauce to serve on a Sunday for a family-friendly meal! The options for an accompaniment are numerous, from fried to mashed potatoes, various kinds of pasta, a fluffy rice pilaf or just steamed Winter vegetables. *** The recipe is equally delicious if you replace the beef with 700-800 gr. of pork fillet cut in slices which of course will need less time to cook

MEAT WEEK 1: Potted Veal in red wine and tomato sauce

Tender veal slowly cooked in tomato sauce along with small onions brings to mind the traditional "stifado" recipe. Only in a rather lighter version I would say, regardless the presence of the bacon. The good quality of the red wine used is rather essential in this recipe because it will come so nicely together with the sweet onions and the bacon. There are so many Greek good reds in the market but also a Syrah will do the job perfectly in this case. You can serve the food as it is but also you could accompany it with steamed white rice or tagliatelle

Classic beef and aubergines stew in tomato sauce

This is a popular Summer dish due to the tomatoes and the eggplants or the courgettes you can add in it and which both are still in season. These type of dishes we call them "kokkinista" in Greek and this term refers to meats when they are slowly cooked in tomato and/or wine sauce (with or without any veggies in, because you can also serve them with potatoes, pasta or rice pilaf). The "kokkinista" always have been a cornerstone of Greek cooking and whole generations have been raised with these dishes. The recipe needs its time to be cooked but this what makes it even more tastier and it is a great idea to feed and please a big crowd

No-tomato sauce beef stifado with mild spices

The traditional recipe for stifado asks for tomato sauce but here we have an alternative and more light version of the dish to enjoy during the warmer months. Other than that, the key ingredient which makes this dish a real "stifado", the shallots, are there and as always are sweet and tender. Although foreshank is tougher than other parts of the beef meat it is also much more tastier and since the food is slowly cooked there will not be a problem

Classic beef yiouvetsi with orzo pasta

"Yiouvetsi" or "Giouvetsi" is a baked dish made, mainly, with either chicken, lamb or beef and always with some kind of pasta like "orzo" or "hylopites" or "spaghetti". In old times they used to cook it in big clay pots (like the one you see above) which nowadays are back in fashion. The recipe is not really complicated but requires some preparation and plenty of cooking time so to end up with the best of results of a melting in the mouth meat and the pasta not overcooked

Double cooked beef "kapamas" with Spring onions

A very tasty, light and filling recipe to enjoy for a Sunday meal. The term "Kapamas" has its roots in the Turkish language and refers to the way the food is cooked- in the pot covered with the pot lid all way through. Always slowly cooked and the meat usually cut in medium or smaller pieces. The classic recipe demands beef or lamb but you can always substitute with chicken, pork or even rabbit meat. This version is lighter with a white sauce and the subtle aroma and taste of the Spring onions

Tender beef slowly cooked and a nicely spiced creamy sauce give you this delicious family dish to enjoy any day of the week! The original recipe is cooked in the oven but I found that it was not so suitable this way of cooking for the specific recipe. In the pot, where I cooked it after the first time, I think it's better at keeping the meat juicy and the creamy sauce more "lively"

Beef fillet with cognac, thyme and lemon

Most of the beef sold in Greece is imported, though some animals are bred abroad and raised in Greece. Some people insist that imported meat is best, particularly from countries with a long cattle-raising history (like Argentina, the Netherlands, New Zealand, Ireland, UK), but others say exports are inferior to what locals enjoy in the country of origin, or are the result of intensive farming. But regardless of all these and if the meat is organic or conventional, imported or local, beef fillet does not come cheap and that's why we need to handle and cook with care! Definitely beef fillet is not the piece of meat for those (me included) who prefer their meat really well done... but if it is cooked until it reaches its limit then it is not bad at all:-)
