Orzo pasta yiouvetsi with fish and shrimps

An easy, light and delicious alternative to the classic "yiouvetsi" recipe with orzo pasta. The addition of the fish and the shrimps creates a very elegant flavour and I believe it will become one of your favourite recipes

Ingredients (for 4 people):
400gr. cod fillet, cut in pieces
15 medium size shrimps, cleaned
1/4 tea-cup of olive oil
3 spring onions, finely chopped
2½ tea-cups of orzo pasta
1 tbsp of fresh dill, finely chopped
1 tbsp of flat-leaf parsley, finely chopped
1Lt of  vegetable stock
salt
pepper

Method:
Preheat the oven to 180°C.

In a frying pan warm the oil on medium heat and sauté the spring onions until they get soft.

Add the fish and the shrimps and sauté for about 2-3 minutes until they change colour. Add the pasta and stir well to coat with the oil.

Empty the pan mixture into a pyrex dish, add the vegetable stock, season with salt and pepper, add the herbs and stir well.

Put in the oven and bake for about 40 minutes until the orzo is cooked through.
