Quince is a very popular fruit in Greece. Although it is not possible to eat it raw because of its bitter and stiff taste it can become an excellent ingredient for various savoury and sweet recipes. It is very versatile and there are so many different ways of cooking it. Here we have one of the classic and very easy versions of baked quinces
Ingredients (for 6 people):
10 whole cloves
6 medium size quinces
3-4 tbsp of brandy
1 glass of red dry wine
1 glass of water
2-3 cinnamon sticks
1 lemon, the juice
50gr. cold margarine cut in cubes
800gr. of sugar
Vanilla ice cream or Greek yoghurt and roughly chopped walnuts for serving
Method:
Wash the quinces very well under running water and peel them.
Preheat the oven to 180°C.
Cut the quinces in thick slices or wedges and put them in a pyrex dish along with the sugar and the rest of the ingredients and toss with your hands.
Cover the pyrex with cooking aluminium foil and bake in the oven for 1 1/2 hours without disturbing them at all.
Towards the end of the cooking uncover and leave them in the oven for a few more minutes until they get a nice colour.
Take out of the oven and discard the cinammon sticks. Serve while they are still warm along with yoghurt and walnuts or vanilla ice cream.
