A great idea for breakfast (if liqueur is omitted) or as a quick dessert for all seasons. Instead of throwing them or just reheat them or making the same old bread pudding dessert, stale croissants, can be transformed into a tasty surprise with just a few ingredients used

Beer-batter crêpes with hot dogs and sauce - The ultimate homemade fast food for an easy meal!
Fast food at home! Clean "junk food" which doesn't make us feel guilty! Classic hot dogs in a different way.... Delicious savoury treat for all seasons and occasions to enjoy with the family and friends, giving us the satisfaction that is homemade with ingredients chosen carefully by us! And of course, as it happens often with such kind of recipes, you can use your imagination to play with other ingredients that could go in these savoury rolls. Don't stay at the mustard as the only option for example... *** If the crêpes are for children too then omit the rum in the batter

PUMPKIN SEASON : Pumpkin and eggs gratin with spring onions, herbs and cheese
Pumpkin, surely the star of this month for the Americans but very popular as well to other nations around the world during the cold Winter months. Quite a versatile vegetable since it can be used in so many sweet and savoury dishes. Like this gratin for example which you can serve as a first or side dish, or as a light meal for a tasty Sunday brunch. Easy to prepare and with nice and simple ingredients you can think of it as an oven omelette or a type of soufflé... It is really tasty and the rather distinctive taste and aroma of the pumpkin comes to a nice balance with the rest of the ingredients without dominating the final flavour

Cretan "Dakos" topped with fried egg
The traditional Cretan barley rusks this time with the addition of a fried egg on top to enjoy for breakfast, as a first dish or a light meal. Dakos traditionally is topped with Cretan "Xynomyzithra" cheese which is a European protected designation of origin cheese. It is a traditional, unpasteurized fresh cheese, a sour variant of "Myzithra". It is made with milk and whey from sheep and/or goats. The Xynomyzithra comes in various sizes and its shape is usually a truncated cone or ball. It is soft, snow-white, creamy and moist, with a sour taste

"Sfougatto" omelette with courgettes and two cheeses
This is a classic and traditional Summertime dish of the Greek cuisine, which can be found in various areas of the country but surely it is a popular dish in the islands. Simple but tasty ingredients come together perfectly for this kind of omelette which can be served as a brunch or light meal. There are no special tips about it except that the courgettes need to be fresh and tender for better taste and the eggs as fresh as possible. The housewives in Mytilene (in Lesvos island), though, insist that there is a small secret for a successful "sfougatto": to sauté the grated courgettes until they are lightly stuck at the bottom of the pan without getting burned...

Eggs "Strapatsada" with asparagus
"Strapatsada", the Greek version of scrambled eggs. This time with a delicate and tasty vegetable which is still in season, the asparagus. Serve this egg recipe as a brunch dish or light meal on a warm day. Not many ingredients involved in this recipe but still it is very tasty and filling

Cretan Dakos - Tasty barley rusks
This is a light but so refreshing and delicious dish coming from Crete and it is called "Dakos" which in a way means "pile up". We do like barley and other types of rusks in Greece and this is a very quick and tasty dish which can be served as a first dish or even instead of a salad (individually), even if you have it with just a bit of feta cheese on top. In Crete though it is a traditional recipe and now it has become quite famous outside the borders of this beautiful Greek island. Good quality of olive oil and the Cretan Xinomyzithra cheese are the secrets

Fried eggs on crusty rustic bread
So simple, so easy and fast but sooo delicious to enjoy for breakfast or a light meal!! Classic recipe, bringing back childhood memories when ingredients like butter, eggs and bread were still so "pure" and when still people were not so worried about cholesterol, calories and all these evil things that nowadays give us nightmares and make us feeling guilty....

Omelette with portobello, cheese and sausages
Omelettes are always welcomed by adults and kids alike. In our house omelette is one of our favourite foods either as a filling breakfast, a brunch or a light meal along with a salad. We find them the ultimate tasty and fast dish! There is nothing exceptional about the specific recipe, just fresh eggs, good quality of sausages, the meaty portobello and the special taste of Manouri cheese which it can be replaced by Feta cheese. Always better if you finish the cooking of the omellette in the oven because it makes it more moist and fluffier whereas on the cooker it usually turns out more dry and rather flat

Tiganites - Traditional Greek "pancakes" with grape molasses syrup
Serve these cute Greek-type of pancakes ("tiganites") as a dessert or breakfast for something different than the classic pancakes! Easy to make, these fried dough puffs are something between small size pancakes and fritters and for generations this was the joy of children and adults as far as dessert was concerned... There are various versions with minor differences between them regarding the ingredients or the way they are served and in today's recipe the "petimezi" (grape molasses) is giving an extra flavour to them

Omelette with artichokes and rosemary
Another light but delicious recipe to enjoy those Summer days when it is too hot to trap yourselves in the kitchen or when on vacation and you need something light for you and the family. The original recipe demands the "Tinos island variety" of artichokes but of course it is not possible to be found abroad. Try to find small and tender artichokes and the recipe will not lack in taste at all

Fragrant omelette stuffed with spinach and feta cheese
We love eggs and although not everybody is a fan of spinach at our home this omelette makes things much easier... Simple, tasty and very filling this recipe serves us in the best way when we want a light meal or brunch any day in the week. Especially those days that not much time is available for cooking this omelette is a saviour!! I liked the idea of the anise and the fennel in the egg mixture because it gives a very light flavour of ouzo and a very nice aroma and in my opinion goes perfectly well with the specific filling. If you are not a fan though simply omit any of the two spices
