Easy and fast egg and sausage sandwich

When the days are really hot most of us don't like the idea of  being around the cooker for too long... The choices of light meals are numerous and this easy sandwich is a nice idea to have something fast and tasty at home to please our hunger. The sausage can be replaced with smoked or boiled turkey and of course in that case you avoid cooking completely. The rest of the ingredients are just one of so many combinations you could have and it's up to you to follow or to adjust the recipe according to your personal preference

Fluffy turkey burgers with sauté vegetables - A lighter but tasty attempt for "junk food" made at home

Replacing the beef with ground turkey and the fries (okay, not always...) with some tasty sautéed vegetables we could end up with a really delicious alternative to the customary burgers made at home for the whole family! The burgers keep fluffy and moist thanks to the carrot in the mixture and the herbs add to the flavour. The vegetables cooked almost to a caramelised state are really delicious and all of these ingredients gathered together create a really filling meal which even the kids will like!

Country-style sandwich with roasted lamb - A tasty solution for the leftover Easter meat

This is what I was telling you about regarding the leftover Easter food... Mainly eggs (a nice pie is coming up) but also leftover Easter meat... and I believe it has happened to many of you too- more than once... Being left with plenty of roasted lamb the next day, especially if cooked on the spit where always a bigger quantity of meat is needed... I'm sure you don't really need my tips but just in case you are out of ideas, or fed up of cooking for the Easter weekend, here there is an easy recipe which became a favourite of ours the last few years on a day like this. A simple but nevertheless very tasty sandwich! Sweet and sour flavours really love the roasted lamb (or goat kid) and it will give you the chance to taste something different without a lot of effort. *** The cheeses used are only an indication. You can use various fresh white or blue soft cheeses for the mixture to give the flavour you prefer

Light in calories and really delicious these "biftekia" will be surely appreciated by everybody! To make the recipe more kids-friendly and give them the chance to eat vegetables that usually they avoid, adjust the spices accordingly. We are not into too hot spiced dishes in our family so I tried to find the right amount of each spice to suit us better. Sandwich with Greek Manouri cheese and rocket pesto

Manouri is an airy and light semi-soft white cheese used very often in making sweet and savoury pies and desserts but also used in salads. It is made from the drained whey from feta cheese production (of sheep's or goat's milk). Similar to feta cheese but creamier and much less salty or even salt-free. The regions famous for the Manouri cheese are Central and Western Makedonia (up-North Greece) and Thessalia (Central Greece). It has a slightly grainy creamy texture and a milky taste with a mild citrus flavour. It does not have an outer rind or solidified casing. It is almost always sold in log-shaped rolls or in individual pieces cut from a roll. Wherever a sweet, rich cheese is used, think of manouri. Decent substitutes for Manouri are the goat cheese, the cream cheese or farmer's cheese. To introduce you to this tasty cheese I have a nice and light sandwich that you can enjoy anytime of the day. It tastes even better if you leave it to rest for a bit allowing the bread to absorb the moisture and the flavour of the pesto

Greek burgers topped with garlic tomato sauce and fried eggs

This is a delicious recipe which you can enjoy as a main meal or as a brunch dish. My mother used to follow this idea the times that she happened to have some biftekia left from Sunday's dinner and it used to be one of my favourites. Who can resist a luscious hot egg yolk running off the egg and finishing on top of a grilled burger.... not many in my opinion. Enjoy this dish by accompanying it with some nice double-fried potatoes
