Mini butter croissants with Feta cheese and jam - Boxing Day breakfast little treat

After Christmas rich feast you don't need too much next morning to start the day... This is not really a recipe but more a tasty idea. A fast and easy little savoury treat which, though, doesn't lack in taste at all! The tangy flavour of Feta goes perfectly well with jam or sweet chutney!! It is one of our favourite little treats all year through

Ingredients (for 20 pieces):
20 mini butter croissants, store bought (frozen)
100gr. of Feta cheese, cut in thin slices
1 egg yolk, beaten with 1 tbsp of water
3 tbsp of strawberry, raspberry or fruits of the forest jam (or any sweet chutney)

Method:
Preheat the oven to 170°C.

Lay a piece of baking paper on a large baking tray and arrange the croissants leaving a bit of space between them. Leave in a warm place to raise a bit and then brush on top with the beaten egg yolk.

Put in the oven and bake for about 15-20 minutes. When ready, transfer onto a rack and leave to cool down.

Open with a sharp knife in half, spread a bit of jam on both sides and add a thin slice of feta cheese in each.

Just before serving put in a warm oven for 2-3 minutes to allow the cheese to soften up a bit and serve.
