Three-meat Biftekia (Greek burgers)

To have them with fluffy buns as classic burgers or in the way we usually do in Greece next to fries or oven potatoes and a crispy salad these delicious and very meaty "Biftekia" can become one of your favourite recipes! Very tasty, fragrant and lightly spiced, these burgers won't disappoint you

Ingredients (for 4 people):
400gr. of ground beef
400gr. of ground pork
200gr. of country-style sausages with herbs
1 egg, lightly beaten
2 crustless stale bread slices, soaked in some milk
30gr. of chilled butter, cut in small cubes
1 yellow onion, peeled and cut in quarters
1 fennel bulb, peeled and cut in quarters
½ an orange, the zest
½ tsp of ground cumin
½ tsp of ground fennel seeds

Method:
Peel the membrane off the sausages and finely cut the meat.

Put the fennel bulb and the onion in a blender and whiz until they are almost mashed.

Transfer the vegetables in a large bowl and add the ground meats and the sausage. Then add the rest of the ingredients and knead with your hands very well until everything is well blended.

Cover the bowl with cling film and leave the mixture in the fridge for about 2 hours.

Shape with the mixture equal size burgers and cook on the BBQ (under a hot grill, in a non-stick frying pan or in a greased pan in the oven) for 4-6 minutes on each side.

Serve immediately with roast red peppers, fries or oven potatoes and a salad.
