Ingredients (for 4-6 people)
For the salad:
500gr. finely shredded white cabbage
2 large carrots, grated
1 green apple, cut in small cubes
2 stalks of celery, finely chopped
1 tea-cup of tinned corn
1 tea-cup of pomegranate arils
1/2 tea-cup of finely chopped walnuts
1 tbsp of finely chopped flat-leaf parsley (optional -my addition)
For the dressing:
3 tbsp of mayonnaise
1 tsp of mild mustard
1 pot of Greek strained yoghurt (170-200gr.)
1-2 tsp of plain vinegar
1/2 tsp of granulated sugar (optional -my addition)
1 tbsp of olive oil (optional -my addition)
1 pinch of salt (optional -my addition)
Method:
Put in a large salad bowl the cabbage, the carrots, the apple, the corn and the celery and mix with your hands.
Add half the pomegranate, the walnuts and the parsley and mix again.
Beat the dressing ingredients well with a whisk in a bowl. If the mixture is too thick, thin it out with a splash of water.
Pour the dressing over the salad and mix thoroughly with two spoons. Sprinkle on top with the rest of the pomegranate and serve immediately.
