Homemade individual breads with paprika

This is a really delicious recipe for bread and one of my favourites! Using the same dough (without the paprika) and rolling thin strips of the dough on sesame seeds or grated cheese, you can also make breadsticks! Then you just bake for 15 minutes to 150ºC and you have a whole new version of the recipe!

Recipe of Nicki Mytarea,
from "Cook Book" magazine of "ETHNOS" newspaper

Ingredients (for 10 people):
1 Kg of white soft bread flour (type 55%)
15 gr. of baker's yeast (fresh yeast)
100 ml of olive oil
50 gr. of salt
50 gr. of ground sweet paprika
1 Lt of lukewarm water + extra 250 ml

Method:
Dissolve the yeast in the extra 250 ml of lukewarm water.

In the bowl of a standing mixer put the flour, the olive oil, the salt, the dissolved yeast, the paprika and slowly the water and knead the ingredients for 30 minutes. The dough is ready when it doesn't stick anymore on the sides of the bowl.

Leave the dough to rest for 40 minutes.

Preheat the oven to 70ºC. Brush a baking tray with some oil.

Divide the dough into 10 even small balls. With the rolling pin roll the dough out into a sheet of 3mm thick and give each any shape you fancy (twisted, wreath, star, heart etc - see also photo on top) cutting with the pizza cutter.

Place the breads on the baking tray and initially put in the oven at the 70ºC for 10 minutes until the dough is raised and smooth.

Then turn the temperature up to 170ºC and bake for another 25 minutes.
