Seasonal vegetables "Tourlou" with cheese enclosed in homemade pastry roll
All the flavours of seasonal vegetables and some spicy Greek cheese come together in this delicious recipe! The "Tourlou" ("Briam" if aubergines are not included) vegetarian dish which is one of the most popular Summer recipes around Greece is the idea of this rolled pie. The homemade pastry is really special and you should try it out because you can use it in various recipes but of course you can replace it with store-bought shortcrust pastry which is probably the closest to the original. It is really a very tasty dish this one and it can be served as a first dish or as a main along with seasonal salad. The cheese used here (Greek "Kefalograviera") might be a small problem but if you can't find any then use a semi-hard and semi-salted but rather pungent yellow cheese, something that doesn't melt too easily

Shallow-fried breaded sole fillets served with spinach and fennel sauté
Frying has been a strict "no no" for many people for years now, for others because of health reasons and for others for fitness reasons... But frying is not always so unhealthy as long as we are careful and in moderation with it and to be honest, some things, they can't be cooked differently and to be even more honest some things are much tastier when cooked in the frying pan... Today, although, the recipe demands frying the sole fillets it happens in such a way which will not make us feel guilty about it. Shallow-frying is a better and lighter option and enough to make this delicate fish so delicious. On the other hand, instead of the customary salads or boiled greens we have a very tasty way of cooking the spinach which in Greece is very common and very popular around the country

Skillet roast chicken with yoghurt and herbs

First of all HAPPY MOTHER'S DAY to all mothers!!!! I'm not sure if this special day is celebrated the same date everywhere but it doesn't matter. A big thank you to every mother never goes wasted no matter the day, the date, the occasion or the season! There were so many recipes that I could cook today that reminds me of my mother and of her effort to please her family with a nice, homecooked Sunday meal but this recipe came first to my mind and all the flavours and aromas bring back happy childhood memories. This is a classic and especially popular Sunday meal recipe for almost every household around Greece regardless the season and although the ingredients are simple the final result is delicious! Easy and fast Greek yoghurt-based aubergine salad-dip
In Greece recipes like this we often call them "salads" but what most of them actually are is a dish closer to the consistency of a dip or a spread. Easy savoury Myzithra cheese and Florina red peppers cake
A great savoury cake to enjoy as a snack or to serve at a party or to take with you to a picnic. Kids will love it because it is something easy to handle and eat and the flavours are mild for them. The original recipe involves the Florina red peppers but the customary red bell peppers suit the recipe just fine. The aged Myzithra cheese I would recommend not to be replaced by another cheese because its distinctive flavour only enriches the cake but, of course, if you can't find it then the Italian pecorino or parmesan can be used

Spicy bulgur "pilaf" with aubergines as an alternative to a classic dish with rice
Bulgur (which is nothing more than broken wheat) was always a big part of the Greek cuisine especially when ingredients like rice were not easy to be found. To be honest I was never a fan of bulgur (or couscous for that matter or other similar ingredients). I have tasted it but I didn't like it and I was avoiding to cook it at home, simple as that! On the other hand, I do love rice a lot and often, when bulgur was included in a recipe, I was using rice instead when possible:-)) But I decided that it was time to try it out and this chance appeared when I first discovered this recipe last year. I was curious to see how a Greek popular recipe with rice (rice pilaf with aubergines) would taste with bulgur. I can't say that I loved the dish but I didn't hate it either and actually I have cooked the recipe 2-3 times since then but still I'm not convinced that bulgur and I would meet again soon! There is nothing wrong with the recipe, on the contrary! It's only the fact that some things in life are not for everybody... But for those who love such ingredients this is a great dish to try out!

Fluffy turkey burgers with sauté vegetables - A lighter but tasty attempt for "junk food" made at home
Replacing the beef with ground turkey and the fries (okay, not always...) with some tasty sautéed vegetables we could end up with a really delicious alternative to the customary burgers made at home for the whole family! The burgers keep fluffy and moist thanks to the carrot in the mixture and the herbs add to the flavour. The vegetables cooked almost to a caramelised state are really delicious and all of these ingredients gathered together create a really filling meal which even the kids will like!
