Homemade potato and sweet potato crisps (chips)
Fun to make, this delicious snack is not difficult to prepare at home anytime and enjoy it without guilt since it is much healthier than the store-bought chips (crisps)! Following the same pattern you can have crisps with different flavours (like oregano, paprika, coriander, ginger) etc. Just add the herb or spice you prefer the moment they are out of the pan, just before they absorb the rest of the oil

Multi-purpose mixed mushrooms ragoût sauce
Simple but so delicious this mushroom ragoût can be used as a sauce over various pasta or meat dishes or even as a light vegetarian dish on its own. You can use fresh, frozen or dried mushrooms after soaking them in water. Depending on your preference and their size the mushrooms can stay whole, cut in halves or in thin slices. As for the water the dried mushrooms were soaked in, don't throw it! It can be added in the broth for extra flavour

Omelette with portobello, cheese and sausages
Omelettes are always welcomed by adults and kids alike. In our house omelette is one of our favourite foods either as a filling breakfast, a brunch or a light meal along with a salad. We find them the ultimate tasty and fast dish! There is nothing exceptional about the specific recipe, just fresh eggs, good quality of sausages, the meaty portobello and the special taste of Manouri cheese which it can be replaced by Feta cheese. Always better if you finish the cooking of the omellette in the oven because it makes it more moist and fluffier whereas on the cooker it usually turns out more dry and rather flat

Tart with pumpkin and two cheeses
A very delicious and seasonal tart to enjoy now that pumpkin is in its peak and it can be served among other festive (but not only) dishes. Now, the original recipe includes another special Greek cheese called "Talagani". This cheese is produced by 100% sheep’s milk and comes from Messinia region in South Peloponnese. It resembles the Cypriot Haloumi cheese but Talagani is softer, with a richer taste and creamier texture. There is a delicate saltiness to it with a subtle mint undertone. It is best if grilled or fried and eaten straight away. When grilled it makes a great addition to fresh, green salads and roasted vegetables. It can also be used grated or in cubes in various pies and tarts like the one I'm posting today. If you can't find Talagani no need to fret, you can use the well-know Haloumi instead

Spicy pears with cheese and red wine syrup
Very tasty and elegant recipe to make and serve as a first dish before a Festive or other formal dinner. If you are for stronger flavours replace the roquefort with a spicy gorgonzola or Stilton (a personal favourite) cheese. I have tried the recipe with all these cheeses and although the final taste was different, all of them were utterly delicious. If you don't like rocket you can use baby spinach leaves instead

Mini phyllo meat pies served with fragrant yoghurt dip
A delicious recipe to enrich your table serving these pies as a first dish, as one of many treats on a buffet or to enjoy at a casual gathering along with a chilled wine. You can omit the cheese if you want, I put it in because we are cheese lovers... The sugar is included and I always add a bit because it breaks down the acidity of the tomatoes even from a tin. The onion is added because in my opinion it gives an extra and subtle sweet taste to the filling, but you can omit it if you like

Lentils salad with pumpkin and cheese
Simple, light but nutritious and very tasty this seasonal salad to enjoy with any type of food or even as a light meal. The original recipe asks for a special Greek traditional cheese, called "Anevato" from Kozani region. This is a fresh, soft white cheese (served with a spoon), sometimes dense in texture and sometimes smoother. It has a sourish taste but very pleasant aroma. Traditionally it is made from sheep's or goat's milk or a mixture of both and it goes in pies, salads or as a spread on bread etc. I don't expect you to find it abroad but if you do then, of course, don't miss the chance! Otherwise, substitute the "Anevato" with Anthotyro or Manouri cheese

Easy and fast Greek pumpkin pie with walnuts and spices
One of the various versions of sweet pumpkin pies you can find around Greece. This one is simpler in ingredients and method since there is no pastry involved but we have a thick type of batter to hold together the ingredients. Keep in mind that the pumpkin has to be very well drained
