Ingredients (for 8 pieces):
125gr. of butter, at room temperature
160gr. of granulated sugar
2 large eggs
150gr. of self-raising flour, sifted
80 ml of apple juice
1 apple of your choice (I' ve used Starkin or Golden delicious)
1/4 of tsp of vanilla extract
2 tbsp of brown sugar
1/4 tsp of ground cinnamon
Method:
Preheat the oven to 170°C. Grease and lightly dust with flour an 8-case muffin tray.
In the bowl of a standing mixer beat the sugar with the butter for about 3-4 minutes or until they become creamy.
Add the eggs one at a time, while you continue beating, so the mixture has the chance to absorb the egg added each time. Next add alternately the sifted flour with the apple juice.
Empty the mixture equally in the muffin cases.
Wash and cut the apple into quarters keeping the skin on. Core the pieces and discard the pips and then cut each piece into thin slices (skin on).
Cover each cake with the apple slices. In a small bowl mix the brown sugar with the ground cinnamon. Use half of the mixture to sprinkle on top of the cakes.
Put the tray in the oven and bake for 25 minutes. When ready, take out of the oven and leave in the tray for a couple of minutes.
Take them out of the tray and leave on a rack to cool completely. Sprinkle on top with the rest of the sugar/cinnamon mixture and serve.
