Easy and fast Greek pumpkin pie with walnuts and spices

One of the various versions of sweet pumpkin pies you can find around Greece. This one is simpler in ingredients and method since there is no pastry involved but we have a thick type of batter to hold together the ingredients. Keep in mind that the pumpkin has to be very well drained

Slightly adapted from a recipe of Rena Toyia,
a prominent Cook and restaurateur
from "BHMAgourmet" magazine of "TO BHMA" newspaper

Ingredients (for a pan of 25 X 30cm):
1 water-glass of all-purpose flour mixed with 1 tbsp of baking powder
1 water-glass of pumpkin, grated and well drained
3 eggs, lightly beaten
1 water-glass of walnuts, roughly chopped
1/2 a water-glass of granulated sugar
1/2 a water-glass of blond raisins
1 tbsp of ground cinnamon
1/4 tsp of ground cloves
1/4 tsp of ground allspice
some olive oil
some flour

Method:
Preheat the oven to 170°C.

Put in a large bowl the flour/baking powder mixture and the drained pumpkin and mix well with a spoon.

Add the eggs, the walnuts, the sugar, the raisins, the cinnamon and the rest of the spices and mix again until the ingredients are well blended and you end up with a thick and homogeneous batter.

Brush well the oven dish (bottom and sides) with some oil and lightlt dust with flour. Spoon the batter evenly in the pan and smooth with a spatula.

Put in the oven and bake for about 25-30 minutes.

Leave to stand for 10 minutes before you cut in pieces and serve.
