Recipe of Niki Mytarea,
from "Cook Book" magazine of "ETHNOS" newspaper
Ingredients (for 4 people):
500gr. of chickpeas
1 boiled potato
100gr. of Greek Kasseri cheese, grated
1 tomato, finely chopped
2 yellow onions, grated
2 cloves of garlic, minced
3 eggs
2 tbsp of mixed fresh herbs, finely chopped (flat-leaf parsley, spearmint, marjoram)
1 pinch of ground nutmeg
1 tsp of ground coriander
salt
pepper

all-purpose flour for dusting
olive oil for frying
Method:
The night before soak the chickpeas in a bowl filled with cold water. Next day rinse well and boil the chickpeas until they are tender. Drain in a colander and when they cool down a bit lightly mash with a fork in a bowl.
Add in the bowl the rest of the ingredients and knead with your hands until you have a soft dough. Leave in the fridge for 1 hour to firm up.
Shape the mixture into rather flat "burgers" and lightly pass them through the flour.
Fry in hot oil until they are golden on both sides. Transfer on kitchen paper to drain the excess oil.
Serve immediately sprinkling on top with some finely chopped parsley.

I love chickpea burgers! This is definitely a great version =)
