Frying has been a strict "no no" for many people for years now, for others because of health reasons and for others for fitness reasons... But frying is not always so unhealthy as long as we are careful and in moderation with it and to be honest, some things, they can't be cooked differently and to be even more honest some things are much tastier when cooked in the frying pan... Today, although, the recipe demands frying the sole fillets it happens in such a way which will not make us feel guilty about it. Shallow-frying is a better and lighter option and enough to make this delicate fish so delicious. On the other hand, instead of the customary salads or boiled greens we have a very tasty way of cooking the spinach which in Greece is very common and very popular around the country

Cod fillets with black olives in mildly spiced tomato sauce

We have reached this point again, one week before Easter Sunday and all is sunny and bright and Springy!! Palm Sunday today for the Greek Orthodox calendar (the Catholic one too for that matter since both Easters coincide this year) and this was our meal today which we really enjoyed! According to the forty days fasting period before the Greek Orthodox Easter (Lent), today is the second occasion where fish is allowed to be eaten giving the chance to those who fast to enjoy something different other than strictly Lenten food. The original recipe (and the tradition) asks for salted cod but since it's not easy to find it over here we compromised with fresh cod fillets and it didn't lack in taste at all! Of course it is a recipe which can be cooked anytime through the year. Simple ingredients and easy way of cooking gave us this delicious and filling meal which is great along with a green salad and fresh crusty bread to mop up the sweet sauce

Tender squids with spinach and fresh herbs

So, Lent started yesterday and a lot of people started fasting... Until the Easter week you'll find tasty Greek savoury and sweet recipes which are popular during this period (but not only). Recipes which not only will give you ideas to expand your meal choices for your family but also, for those who are not familiar, to get to know better another side of the Greek cuisine. For a start I have chosen for you an easy seafood recipe which is quite versatile because beside the squids you can also use cuttlefish. Fresh squids are always preferable and the food tastes even better but it is not essential. If they are really small then use them whole otherwise cut into rings and don't throw away their tentacles. When fresh they don't need a lot of time to cook; so don't overcook them because they will turn rather chewy. Spinach is in season so it's better if fresh is used. It is a simple meal as you'll see but very tasty and really nutritious

Oh this is really delicious and quite different than the usual Greek-style baked fish recipes! Although I'm not a huge fan of fish in general, this is one of my favourite recipes! Perch in my opinion is one of the most tasty fishes and this is not only an easy recipe to put together but the rest of the ingredients work perfectly with it (onions, ginger, lemon and wine make the difference) and in the end you have a delicious, filling and of course nutritious meal for the whole family! The pesto going along might seem strange to you but believe me it only compliments the whole dish adding an extra flavour

Baked red mullet with onions and tomatoes

Red mullet, one of the most popular and most tasty fish and in Greece they are indeed very popular! I like their taste but my problem is that they have sooo many little bones to deal with and that's why I don't cook them so often at home. This recipe is a rather classic way of cooking fish in Greece but so tasty at the same time and you end up with a really filling meal. The version I have for you today is more or less the most common. For extra flavour, though, you could add in the pan either a few gherkins cut in slices or green olives (pitted). Another idea is to add a layer of thinly sliced potatoes at the bottom of the pan before you place the fish on top

Sauté fresh sole fillets with champagne sauce and grapes

Sole... A very tasty fish and at the same time light and elegant in a rather unusual recipe so to try something totally different. You don't need to buy the most expensive champagne available of course but don't go for a cheap one either because this will effect the taste of the sauce in the end. As you can see just a few ingredients and not too long over the cooker, it's all you need to have a super meal!

Fresh cod fillets with aubergines and courgettes in light tomato sauce

A very tasty dish to enjoy this fleshy fish along with two very popular seasonal vegetables. The original recipe asks for salted (cured) cod fillets. But, as you know by now, they need some preparation in advance so you can use fresh (or frozen) cod fillets. This is something I did the last few times I cooked the recipe so to gain some time. The cod goes nicely next to the courgettes and the aubergines and cooked in this tomato sauce you have a nutritious but also filling and light family-friendly meal. A suggestion I have for you is that it is preferable to get fillets from the back of the cod. Not only they are more meaty but it seems that they have much less bones to deal with

Paprika scented batter-fried squids

Delicious crispy deep-fried squids to enjoy along with chilled wine, ouzo or beer! Fried squids are very popular in the Greek cuisine and an essential meze or main dish especially during the Summer months. This version is lightly spiced thanks to the sweet paprika. It is likely that you will end up with some batter mix left, don't throw it away! Use the leftover batter to make some delicious savoury puffs. Just change the oil you used for the squids and throw into the frying pan tablespoons of the batter mix. In the beginning they will stay at the bottom of the pan, when they come to the surface they are ready! Serve while they are hot, scattering on top some crumbled feta cheese and sprinkle with some oregano. Nothing goes wasted and you have two meze dishes in one go!
