Ingredients (for 4 people):
4 swordfish fillets (fresh or frozen)
6 ripe but firm tomatoes, cut in small cubes
4 Spring onions, finely chopped (both white and green tender part)
3 tbsp of finely chopped fresh coriander leaves
1 small hot chilli pepper, finely chopped (no seeds)
1/2 lemon, the juice
1 lime, the juice and the zest
salt
pepper
olive oil
Method:
In a bowl put the Spring onions, the chilli pepper, the coriander and the tomatoes. Drizzle with the lemon and the lime juice, sprinkle with the lime zest and stir with a spoon. Taste and accordingly season with salt and pepper. Leave the salsa aside to marinate while you prepare the fish.
Brush the fish fillets with some olive oil on both sides and season with salt and pepper.
Put in a pyrex dish and cook under hot grill for about 10 minutes on each side (or grill on the BBQ).
Serve the fish immediately with the tomato salsa on top and garnish with a few coriander leaves.
