Easy and fast egg and sausage sandwich

When the days are really hot most of us don't like the idea of  being around the cooker for too long... The choices of light meals are numerous and this easy sandwich is a nice idea to have something fast and tasty at home to please our hunger. The sausage can be replaced with smoked or boiled turkey and of course in that case you avoid cooking completely. The rest of the ingredients are just one of so many combinations you could have and it's up to you to follow or to adjust the recipe according to your personal preference

Ingredients (for 4 sandwiches):

2 Frankfurt sausages, finely chopped
1 tbsp of olive oil for shallow-frying
4 boiled eggs, finely chopped
1 Spring onion, finely chopped (both white and green tender part)
2 tbsp of finely chopped flat-leaf parsley
4-5 tbsp of mayonnaise
freshly ground black pepper
8 slices of bread for toast without the crust
4 Romaine lettuce leaves (optional)
4 tomato slices (optional)

Method:
In a non-stick skillet warm the olive oil in medium heat and sauté the sausages for 2 minutes.

Transfer into a bowl and add the eggs, the Spring onion, the parsley, the mayonnaise and season with pepper. Mix gently but thoroughly with two spoons.

Place a lettuce leave on 4 of the bread slices. Divide the filling into 4 parts and spread over the lettuce. Place a tomato slice over the filling and cover the sandwiches with the remaining bread slices.

Cut into triangles and serve immediately.
