Skillet tender pork chops with fried potato wedges scented with fresh rosemary

An easy and rather fast recipe to enjoy with the family. Cooking the pork chops in the skillet in the way the recipe suggests you'll find that they stay tender and moist all the way through. On the other hand, the chunky potato wedges are nicely crispy on the outside and tender inside and you end up with a rustic and really delicious meal

Pork fillet stuffed with sun-dried tomatoes and Anthotyro cheese

Tender and juicy pork fillet stuffed with a couple of really tasty ingredients that the Greek cuisine honours very often! It is an all-seasons recipe this one and I believe that you will really enjoy it. Because of the fillet, the cooking time is not as long as with other meats so not too much hassle for you. The original recipe demands fresh rosemary, which I find too strong in taste and aroma and that's why I usually prefer fresh thyme or even better, fresh oregano which are more subtle. But if you prefer rosemary, it would be better if you turn it into powder and use it carefully. This dish can be served along with various vegetables but sautéed peas and carrots or steamed green beans I think are most suitable. It also goes nicely with white rice pilaf or boiled potatoes drizzled with lemon & olive oil dressing

Potted pork with root vegetables in avgolemono sauce

One more "comfort food" recipe to enjoy with the family before Winter waves us goodbye for this year! Tender pork cooked with various root vegetables and smothered in the famous Greek egg & lemon sauce, the avgolemono! This version is slightly different than the traditional one where only celery or celery and leeks are involved. Here we have more vegetables and the beautiful and delicate flavour of fennel seeds. As usually happens with this kind of Greek recipes, don't neglect to serve the food along with good quality feta cheese and plenty of fresh country-style bread to mop up the creamy sauce!

We really love pork meat in our family and I always try to discover new recipes and experiment with this, rather "misunderstood" in my opinion, kind of meat. In today's recipe we have the classic pork shin (or shank?) slowly cooked in beer sauce and mildly spiced. As you will see just a few ingredients are enough for this recipe! The result is really delicious and I think that this is one of our best Winter-time recipes with pork. The best company for it is a potato salad, a fluffy potato mash or for those who don't worry so much about calories a good portion of fried potatoes

MEAT WEEK 1: Baked pork fillet with smoked cheese and white wine sauce

Such a delicious recipe this one! Pork tenderloin cut into thin fillets and baked with smoked cheese which melts and gives such a wonderful taste! The wine sauce poured over adds extra flavour to the dish and you can enjoy it along with a salad, or rice pilaf or fried potatoes and enjoy with the family a really luscious meal! The original recipe includes the very tasty Greek smoked Metsovone cheese coming from Metsovo (hence its name) in Epirus region. I don't expect you to find this cheese easily abroad, but you can use another smoked, yellow, semi-hard cheese instead. A good substitute for this recipe is, for example, the over-a-flame smoked Gouda

Marinated baked pork fillet with fresh figs and orange juice

A delicious recipe without much trouble to prepare since the pork fillet doesn't need much time to cook and the rest of the ingredients are not complicated at all. A recipe which you can cook anytime in the year since, when not in season, dried figs can be used instead but in my opinion the fresh ones make the difference in this dish. The same recipe can be followed using chicken wings or drumsticks, they are delicious!

Easy sauté pork chops in mild spices sauce
