Pork chops with special BBQ sauce

Cooked in the oven or finished up on the BBQ these luscious pork chops get even more delicious served with this special sauce to enjoy with family and friends at a Summer Sunday dinner!


Recipe from "Cook Book" magazine of "ETHNOS" newspaper

Ingredients (for 6 people):
2Kg of pork chops, bone in (from the neck)
4 thin slices of bacon, finely chopped
1 tsp of Τabasco sauce
4 cloves of garlic, minced
1 large yellow onion, finely chopped
1 tin of tomatoes concassé
½ a tea-cup of brown or granulated sugar
1/4 tea-cup of white wine vinegar
1/4 tea-cup of mustard (mild or hot)
1 tbsp of Worcestershire sauce
2 tbsp of olive oil
2 tbsp of orange juice
2 tbsp of BBQ sauce (of your choice)

Method:
Season the pork chops well on both sides with salt and pepper and leave aside on a plate.

Preheat the oven to 180°C.

Sauté the bacon (without any oil) in a spacious non-stick frying pan on medium heat for a few minutes or until most of its fat is gone.

Add in the pan the onion, the garlic and the Τabasco and continue to sauté for another 4 minutes, often stirring with a wooden spatula. Then add the tomatoes, the sugar, the vinegar, the Worcestershire sauce, the orange juice, the BBQ sauce and the mustard and cook for another 4 minutes.

In another frying pan warm the oil in medium-high heat and sauté the pork chops for about 3 minutes on each side or until they get a nice colour.

Then transfer in an oven pan and pour over with the sauce. Put in the oven and bake for about 1 hour or until they are tender.

Serve immediately along with the sauce.
