Ingredients (for 4-6 people):
6 thick fillets of fresh salmon
6 thick fillets of fresh salmon
3 water-glasses of tomato, grated
1 large yellow onion, finely grated (or finely chopped in the blender)
2 cloves of garlic, minced
1/2 tea-cup of extra virgin olive oil
salt
pepper
pepper
500 gr. of medium yellow onions (or large shallots)
3-4 tbsp of olive oil
1/2 glass of sweet wine
3-4 tbsp of finely chopped flat-leaf parsley
Method:
Peel the onions and cut into thin rings. Transfer into a spacious non-stick frying pan and sauté on medium heat with the 1/2 tea-cup of oil, stirring frequently until they get lightly golden.
Pour over with the wine, stir, turn the heat down to medium-low and leave to simmer until the wine is evaporated and the onions turn almost into a thick pulp. Take off the heat and leave aside to cool.
Preheat the oven to 170°C. Lightly brush a pyrex dish with a bit of olive oil.
In the meantime, in another frying pan warm the 3-4 tbsp of oil on medium heat and sauté the finely grated onion along with the garlic stirring with a wooden spatula. Add in the pan the tomato, season with salt and pepper, turn the heat down to medium-low and leave the sauce to simmer until it is reduced in half.
Season the fish fillets with a bit of salt and pepper on both sides and transfer into the dish. Pour over with the tomato sauce and using a spoon scatter on top the caramelised onions making sure that they spread equally over the fish.
Sprinkle with the parsley and put in the oven. Bake the salmon for 30 minutes. Take out of the oven and transfer the fish on a serving platter. Sprinkle with some more parsley and serve immediately.
