HAPPY EASTER TO THE GREEKS AROUND THE WORLD! - Baked lamb steaks with potatoes, tomatoes and feta cheese

For those who will not have the chance to enjoy the spit-roasted customary Easter lamb this is a nice and very easy recipe to enjoy with the family and friends! Nothing very spectacular about it, simple ingredients which though come together well giving you in the end a hearty meal 


Adapted from a recipe leaflet of the supermarket "Tesco"

Ingredients (for 6 people):
1Kg of baby new potatoes, cut in half lengthwise (skin on)
2-3 tbsp of olive oil
2 tins of concassé tomatoes
2-3 cloves of garlic, finely chopped
1 heaped tbsp of dried oregano (or thyme)
200gr. of Feta cheese, crumbled
1 glass of white dry wine
600-700gr. of lamb leg steaks

Method:
Preheat the oven to 180°C fan.

In a large bowl put the potatoes and toss with the olive oil. Arrange into a roasting tin and season with salt and pepper. Put in the oven and cook for 40-45 minutes.

Take the pan out of the oven and add the tomatoes, scatter the garlic and sprinkle with the oregano. Pour with the wine and mix well but gently with a spoon.

Arrange the lamb steaks on top of the potatoes and scatter on each some of the Feta cheese.

Put back in the oven and cook for another 30 minutes or until the meat is cooked through, the potatoes with a nice colour and the cheese lightly melted.

Serve immediately along with a crispy green salad.
