Another traditional dish which we call "salad" but mainly it is considered as a dip/spread and a meze
Ingredients (for 4-6 people):
600gr. of potatoes
4-5 heaped tbsp of capers, in brine
2 cloves of garlic, puréed
2 tbsp of plain vinegar
½ tea-cup of olive oil
salt
pepper
Method:
Wash the potatoes well and boil them with their skin on until they get tender. When they are soft enough, drain them in a colander and then peel them. Mash them thoroughly in a bowl.
Put the capers in a bowl full of water and let them soak for half an hour to discard the excess salt. Drain them in a colander and finely chop them. Add them in the bowl with the mash.
Add in the bowl the garlic, the olive oil, the vinegar and season with salt and pepper. Mix the ingredients very well using a fork.
Transfer onto a serving dish and garnish on top with some capers.
It can be served lukewarm or cold.
