Christmas salad dressing with pomegranate

Christmas and pomegranate are best friends! Such a big favourite and so versatile! Here we have a tasty dressing which goes perfectly well with green salads, beetroots or cabbage, with chestnuts or even avocados. It goes well with shrimps, lobster and scallops but also with salmon. You can even use it as a marinade for pork meat, game and poulty

Ingredients (for about 1 tea-cup):
200ml olive oil
1/2 tea-cup of fresh pomegranate juice (you will need 2 ripe pomegranates, about 300gr. each)
2 tbsp of lemon juice
1 blood orange, the juice
1 tbsp of pomegranate seeds

Method:
Roll the pomegranates on a working surface until the fruit gets soft enough and feel the juices getting loose inside. Using a knife discard the flat side of them and squeeze with your hands to get the juices into a bowl. Drain the juice in a small saucepan.

Simmer the juice in low heat for 10 minutes, until the quantity is reduced by half. Leave the juice to cool down a bit and then mix it in a bowl along with the oil, the lemon and the orange juices. Whisk the ingredients very well until they become a fine sauce.

When it is ready add the pomegranate seeds and keep in the fridge until you need the dressing.

Note:  We never beat the pomegranate seeds in a blender because the juice will become bitter and stiff and it will lose its fine taste and aroma
