Country style sausages with Haloumi cheese baked in baking paper

A delicious (and very fast and easy) recipe to enjoy anytime in the year really and not only during the Winter months. Great dish to share as a meze along with some good red wine


Recipe from "COOK BOOK" magazine of "ETHNOS" newspaper

Ingredients (for 6 people):
3 large country-style spiced sausages, cut in medium bites (pork or beef)
120gr. of Haloumi cheese, cut in cubes
1 medium lemon, thinly sliced
1 tbsp of fresh spearmint, finely chopped
30ml of olive oil
1 yellow onion, thinly sliced
1 small hot green or red pepper, finely chopped (without the seeds)
coarse salt
plenty of baking paper and kitchen twine

Method:
Preheat the oven to 180°C.

Put all the ingredients in a large bowl and toss with your hands to blend well.

Get two large pieces of baking paper and put one on top of the other. Transfer the ingredients in the centre of the paper and wrap well into a packet.

Tie the packet carefully with the kitchen twine and transfer it on the middle rack of the oven, having a baking sheet sitting on the rack below.

Bake the food for 25-30 minutes. If you want, 5 minutes before the cooking is done, make a hole on the top of the baking paper and leave the food to get some colour. It is nice this idea but not essential.

Transfer on a large platter and serve immediately directly from the baking paper. This is a great recipe to accompany your ouzo!!
