Recipe from "Cook Book" magazine of "ETHNOS" newspaper
Ingredients (for 10 people):
800gr. Greek manouri cheese
400gr. Greek anthotyro cheese
4 eggs, beaten
1 tea-cup of granulated sugar
½ tea-cup of all-purpose flour
1 tsp of vanilla extract
1 pinch of salt
margarine for brushing
some extra granulated sugar for sprinkling the pan
Ingredients:
Preheat the oven to 180°C.
In a large bowl beat the cheeses with a hand mixer. Add the eggs, the sugar, the flour, the vanilla and the salt without stop beating.
Brush with some marge an oven pan of 30x40cm and sprinkle the bottom with some sugar.
Empty the cheese mixture in the pan and smooth the surface with a spatula. Put in the oven and bake for 30 minutes or until a knife inserted in the mixture comes out clean and a nice golden crust is formed on the top.
Take the pan out of the oven, leave to set for 10 minutes and then cut into medium-sized square pieces.
Serve the dessert accompanying it with orange marmalade or sour cherries dessert-spoon sweet or sprinkling on top with some granulated sugar and ground cinnamon.
