Summer fruits salad with Anthotyro cheese drizzled with ouzo-scented syrup

A very easy but also very tasty and refreshing fruit salad to end up a nice Summer dinner! Seasonal fruits in small bites along with some elegant Anthotyro cheese and poured over with a special syrup!

Ingredients (for 4 people)

For the salad:
2 cups of watermelon, cut in small cubes
1 cup of melon, cut in small cubes
1 handful of sweet white grapes (without pips)
8 ripe but firm fresh figs, peeled and cut in quarters
200gr. of Anthotyro cheese, cut in small cubes

For the syrup:
4 tbsp of granulated sugar
1/2 cup of water
1 shot of ouzo
1 pinch of ground cinnamon

basil or spearmint leaves to garnish

Method:
Put the water and the sugar into a small saucepan and boil for 5 minutes in medium heat. Add the ouzo and the cinnamon and boil for another 1-2 minutes.

Transfer the syrup into a sterilised jar and leave in the fridge to chill.

Divide the fruit cubes into chilled bowls and scatter on top with the cheese.

Drizzle with the ouzo-scented syrup, garnish with some fresh basil (or spearmint) leaves and serve immediately.
