Recipe of Efi Yialoussi

For the pastry:
150 gr. of all-purpose flour (sifted)
80 gr. of butter (or margarine)
50 gr. of icing sugar
40 ml of water
1 egg yolk
1 pinch salt
For the filling:
400 gr. of sweet black grapes (seedless)
400 gr. of sweet white grapes (seedless)
20 gr. of melted butter
100 gr. of icing sugar
40 gr. of all-purpose flour (sifted)
1 egg
50 ml of sour cream
1 egg yolk, lightly beaten
Method:
Put in the bowl of a standing mixer the butter, the flour, the sugar, the egg yolk and the salt and beat until you end up with a homogeneous mixture. Add the water in the bowl and continue working the ingredients until a ball of dough is formed.
Wrap the dough with some cling film and leave in the fridge to rest for 1 hour.
In the meantime preheat the oven to 175°C and brush with some margarine a 24 cm tart dish.
In a bowl lightly beat the egg with a whisk, add the cream in and stir to mix.
Put the grapes and the melted butter in another bowl and mix thoroughly so they get well coated. Sprinkle the grapes with the icing sugar and the flour and leave aside for later.
Take the dough out of the fridge and using a rolling pin, roll it into a sheet. Carefully lay the dough in the dish making sure that the bottom and the sides are properly covered, allowng about 2cm of the dough hanging over the rim.
Prick the dough with a fork in several places and empty the egg / cream mixture. Scatter the grapes on the surface of the tart. Fold the hanging dough inwards forming a border all around and brush with the beaten egg yolk.
Put in the oven and bake for about 45 minutes. Allow the tart to cool down a bit before you cut it into pieces and serve. It can be served lukewarm or cold accompanied by vanilla ice cream or whipped cream.
