Ingredients (for 8 portions)
For the ice cream:
1 tin of evaporated milk
2 tea-cups of cream (35% fat)
8 egg yolks
1 tea-cup of granulated sugar
2 tsp of vanilla extract
1/4 tsp of salt
For the brownies:
2 tea-cups of granulated sugar
225gr. of butter (or margarine)
4 egg yolks, lightly beaten
4 egg whites, beaten into a light meringue
110gr. of dark chocolate, cut in pieces
1 tea-cup of all-purpose flour, sifted
1 tsp of instant ground coffee
2-3 tbsp of finely chopped blanched almonds
Method:
For the ice cream
If you don't have an ice cream maker, beat in the bowl of a food processor the egg yolks, the sugar, the salt and the vanilla extract for 5 minutes.
Warm the milk in a saucepan in low heat and then transfer into the egg mixture while constantly stirring at the same time with a wooden spoon. Transfer this mixture into the saucepan and simmer in low heat while keeping stirring until the mixture starts thickening. Immediately take the saucepan off the heat (so to avoid the eggs to curdle) and transfer to the fridge.
In the food processor bowl beat 1 tea-cup of the cream until it thickens. Take the egg mixture out of the fridge and mix well with the beaten cream. Divide the ice cream mixture into ice cube trays and transfer into the freezer.
For the brownies
Preheat the oven to 180°C.
Melt the chocolate and the butter in a saucpan in very low heat, constantly stirring with a rubber spatula. Transfer the mixture into a bowl, add the sugar and the coffee and stir very well.
Then add the egg yolks, the flour and gently stir. Add the egg whites and again gently stir. Brush 2 shallow baking trays of 30x45cm with some butter and divide the brownies mixture between them. Sprinkle on top with the almonds, put in the oven and bake for 25 minutes. Take out of the oven and leave in the trays to cool.
Take the ice cream cubes out of the freezer and put in the bowl of the food processor. Add the rest of the cream and beat until they are melted and well blended with the cream.
Spread the ice cream on top of the first brownie. Overturn the second brownie on top of the ice cream and gently press to stick together.
Cover the whole baking tray with cling film and put in the freezer for 4 hours. Take out of the freezer cut into 8 squares and serve.
