Easy Summer pasta dish with peppers, courgettes and feta cheese

So simple but so tasty this Summer dish and quite filling too! Ingredients that more or less are already in our fridge, some pasta and you end up with a nice meal for the whole family

Ingredients (for 4 people):
500gr. of penne pasta
1 large yellow onion, cut in thin rings
6 medium courgettes
2 red Florina peppers (or red bell peppers), grated (with their juices)
1 tea-cup of fresh spearmint leaves, finely shopped
1 leveled tbsp of dried spearmint, crushed
6 tbsp of olive oil
200gr. of feta cheese, crumbled
1/2 tsp of dried oregano, crushed
Salt
black pepper

Method:
Cut the courgettes in half lengthwise and remove any seeds with a small spoon. Then cut into 0,5cm wide sticks.

Boil the pasta in plenty of salted boiling water for 1 minute less than the packet instructions suggest.

In the meantime, warm the oil in a deep, non-stick frying pan (or a large saucepan) on medium-high heat and sauté the onion rings. As soon as they change colour, add in the pan the courgettes, the grated peppers with their juices and season with salt and pepper. Sauté the ingredients until the courgettes are slightly browned. Add the oregano and stir.

Transfer the pasta to the pan with a slotted spoon along with a little of its water and, shaking the pan well, cook for another 2-3 minutes.

Add in the pan the spearmint, the feta cheese and extra pepper. Gently stir and serve at once.
