Baked stone fruits flavoured with mastic liqueur

Easy, fast and delicious fruit recipe to serve as a light dessert during Summer months! You can use any fruit you might like according to season following the same pattern. Peaches and apricots, two of the most popular Summer fruits come together nicely and get an extra flavour and aroma thanks to the precious mastic

Ingredients (for 4 people):
4 ripe but firm peaches, stoned and cut in half
8 apricots, stoned and cut in half
50ml of mastic liqueur
2 tbsp of fresh spearmint, finely chopped
4 tbsp of granulated sugar

vanilla ice cream or Greek yoghurt for serving

Method:
Put all the ingredients in a large bowl, mix with your hands, cover the bowl with some cling film and leave in a cool place for 20 minutes to marinate.

Preheat the oven to 220οC.

Lay a shallow oven tray with baking paper and arrange on top the fruits (cut side up) along with their juices.

Put in the oven and bake for 15-20 minutes or until they start getting "wrinkled" and lightly brown here and there.

Serve while they are still warm next to a scoop of ice cream or dollops of yoghurt.
