Linguine with ouzo flavoured tomato sauce and crab

Another Summer dish to enjoy with the family! Crab maybe is not as popular as other sea food but its meat is very tasty and in this recipe goes perfectly well with the rest of the ingredients

Ingredients (for 4 people):500gr. of linguine pasta
1 wine-glass of olive oil + 2 extra tbsp
1 clove of garlic, grated
1 medium yellow onion, grated
3 tins of crab meat, well drained
6 ripe tomatoes, grated
1 "horn" sweet green pepper, cut in thin rings
1/2 a bunch of flat-leaf parsley, finely chopped
1 shot of ouzo
1/2 tsp of hot red pepper
salt
pepper

Method:
Boil the pasta in plenty of salted boiling water, following the instructions on the packet and then drain in a colander. Transfer the pasta back to the pot, mix in the extra 2 tablespoons of olive oil and leave aside.

In a spacious saucepan, sauté the garlic and the onion in the rest of the olive oil stirring with a wooden spoon until they are softened but not browned.

Add the pepper, sauté for another 2 minutes and then pour over with the ouzo. Leave the food for another minute until the alcohol evaporates and then add the tomatoes, salt, pepper and the red pepper and continue cooking for another 10-15 minutes.

Add in the saucepan the parsley and the crab during the last minute of cooking and stir.

Mix the sauce with the pasta and serve immediately.
