Ingredients (for 4 people):
4 medium sized perch fillets
4-5 medium onions, sliced
6-7 cloves of garlic, finely sliced
3 bay leaves
1 tbsp rosemary, dry
1 tea-cup olive oil
1 tea-cup walnuts, finely chopped
1 tbsp flat parsley, chopped
salt
pepper
For the garlic sauce:
1Kg of stale bread, no crusts (soaked in water and drained well) or 500gr. very fine breadcumbs
1 tea-cup wine vinegar
8-12 cloves of garlic
1 tea-cup olive oil
salt
Method:
Preheat the oven to 180° C.
Wash the perch fillets, pat them dry with kitchen paper and season well both sides.
In a spacious oven pan or pyrex arrange evenly the slices of onions and garlic.
Sprinkle on top with the pepper, the rosemary, add the bay leaves and on top arrange the perch fillets.
Drizzle all over with the olive oil, put in the oven and bake for 15 minutes, until the fish gets coloured.
For the sauce:
In the bowl of the food processor, mix the garlic with a bit of salt and gradually add the soaked bread, little by little.
While keeping the bowl mixing, add gradually the olive oil and the vinegar, little by little and in turns until we get a soft and smooth consistency.
Get the pan out of the oven, sprinkle over the fish fillets with the walnuts and on top, spread the garlic sauce evenly.
Back in the oven for an extra 5 minutes, until the sauce gets a nice light brown crust.
You let the food rest for a bit and before serving, sprinkle with the parsley.
