Baked rabbit with bacon in lemon sauce

Easy, very tasty and fine flavours in this dish with rabbit. You can substitute with chicken if you want but I believe that rabbit is the best match

Ingredients (for 6 people):
1 rabbit (about 1 ½ Kg), cut in portions
1 tea-cup of olive oil
½ tea-cup of lemon juice
6-8 small onions (pearl onions)
3-4 cloves of garlic, finely chopped
180gr. bacon lardons
1Kg of baby potatoes, peeled
1 tea-cup chicken stock
salt
pepper
oregano

Method:
Preheat the oven to 180ºC.

In a pot,warm half the quantity of the oil on medium to high heat and sauté the rabbit in batches for 3-4 minutes until it gets nicely coloured all over.

Add the lardons and the garlic and sauté for another 1-2 minutes. Pour over the food the lemon juice, season with salt, pepper and the oregano and leave the food to boil for 3 minutes.

Transfer the food in a clay pot (or a pyrex dish) and place the onions and the potatoes among the rabbit pieces.

Pour over with the chicken stock and the rest of the olive oil. Put in the oven and bake for 1 1/2 hours or until the rabbit is nicely coloured, the potatoes and the onions cooked through and the food is left with a nice slightly thick sauce.

Serve immediately along with a crispy salad.
