Fragrant cinnamon and orange cake with buttery glaze

The whole house will smell of cinnamon while you'll be baking this fluffy cake! It is an ideal, not too sweet, snack for anytime to enjoy along with a cup of tea or coffee

Ingredients (for 10 portions):
1 tea-cup of butter, at room temperature
1 ½ tea-cup of granulated sugar
4 eggs
1 leveled tbsp of ground cinnamon
1 large orange, the zest
1/2 tea-cup of fresh orange juice
1/4 tea-cup of cognac
3 ½ tea-cups of self raising flour, sifted
2 tbsp of butter for glazing
granulated sugar and ground cinnamon for dusting

Method:
Preheat the oven at 170°C. Grease with a bit of butter a medium round cake tin and lightly dust with some flour. Place the rack at the lowest position of the oven.

In the bowl of a food processor beat the butter with the sugar for 5-6 minutes until they form a creamy mixture. Add the eggs, one by one, without stopping beating and then add the ground cinnamon and the orange zest. Pour with the orange juice and the cognac and in the end gradually add the sifted flour while stirring.

Empty the mixture in the cake tin and put in the oven. Bake for about 1 hour. Take out of the oven and leave the cake in the tin to cool for 10 minutes. Take out of the tin and leave on a rack to cool completely.

Melt the 2 tbsp of extra butter in a small frying pan and when it starts steaming take off the heat. Using a brush grease the surface and the sides of the cake with the butter. Sprinkle on top with the granulated sugar and the ground cinnamon and cut in slices.
