Ingredients (for 6-8 people)
For the pastry:
250gr. of all-purpose flour + a bit more for dusting
100ml of olive oil + extra 1 tbsp for greasing
50ml of fresh milk
1 egg, lightly beaten
1 leveled tbsp of dried oregano, well crushed

For the filling:
1Kg of mixed grape berries, well rinsed (white seedless, pink and dark grapes - cut the large berries in half and discard the seeds - leave whole the rest)
1 tea-cup of soft feta cheese, crumbled
1 tea-cup of anthotyro cheese, mashed with a fork
1/2 tea-cup of Greek Graviera cheese, grated
3 eggs, lightly beaten
3 tbsp of olive oil
1 tbsp of honey (or "petimezi"= grape molasses, which suits better with the grapes)
salt
pepper
1/2 tsp of mixed ground spices like cinnamon, cumin, allspice, nutmeg, cloves
Method:
For the dough, sift the flour in a large bowl and add the 100 ml of oil. Mix with your hands, rubbing the mixture with your fingers, so to allow the flour to absorb the oil and form wet crumbs.
Add in the bowl the milk, the egg, the oregano and the salt and knead the ingredients until they just come together and not more because the dough will become sticky and difficult to handle. Shape the dough into a ball, wrap with cling film and leave in the fridge for 30 minutes.
For the filling, put in a large bowl the feta cheese, the anthotyro cheese, half the Graviera cheese, the eggs, the oil, the honey (or the grape molasses) and the spices. Season with salt and pepper and mix well. You'll notice that the mixture will be almost like a thick cream.
Preheat the oven to 180° C.
Brush with the rest of the oil a round tart dish of 26-28 cm.
Take the dough out of the fridge, place it in the dish and gently stretch it with your hands making sure it covers the bottom and the sides of the dish.
Prick the dough with a fork in various places and bake in the oven for 10 minutes. Take out of the oven and array on the base of the tart the grapes. On top spread the cheese filling and smooth the surface with a spatula. Sprinkle on top with the rest of the Graviera cheese.
Put the dish in the middle shelf of the oven and bake for about 40 minutes or until the tart gets a nice golden colour on top.
