Recipe of Elias Demirtzoglou,

Ingredients (for 8-10 people):
10 ripe fresh figs
2 eggs
5 egg yolks
1 tea-cup of honey
500ml of fresh cream, chilled (35% fat)
4 tbsp of roasted pine nuts
some butter
some liqueur or cognac of your choice
Method:
In a large bowl put the eggs, the egg yolks and the honey and beat with a hand mixer until you have a fluffy mixture.
In another bowl beat the chilled cream until it reaches a whipped cream consistency (crème chantilly).
Mix gently but thoroughly the two mixtures together and empty in a mould lined with some cling film or into individual bowls. Transfer the pudding in the freezer and leave for 2-3 hours.
Before serving, score the figs deeply crosswise (keeping their shape intact at the bottom) and add a small knob of butter in each one. Drizzle with some liqueur and array in a baking tray lined with baking paper. Put under a hot grill and bake for just a few minutes until they get nicely coloured but not to get dried out.
Serve the pudding along with the figs and their juices and sprinkle with the pine nuts on top.
