Ingredients (for 6-8 people)
For the pastry:
300gr. of all-purpose flour
100gr. of granulated sugar
200gr. of butter, at room temperature
50gr. of blanched ground almonds
For the filling:
300ml. of crème fraîche
260gr. of dark chocolate
60gr. of butter
10gr. of honey
50ml of Cointreau (or other orange-flavoured liqueur)
Method:
Preheat the oven to 170°C. Brush with some butter a medium-large tart tin.
In a large bowl knead the pastry ingredients all together and work with your hands until you have a smooth dough. Wrap with cling film and leave in the fridge for 30 minutes to rest.
Transfer the dough into the tin and stretch with your fingers evenly into a thin layer covering the bottom and the sides of the tin. Using a fork prick the dough at the bottom in various places. Put in the oven and bake until the pastry is nicely coloured. Take out of the oven and leave aside to cool.
In the meantime, melt the chocolate with the "bain-marie" method in low heat. Add the butter, the honey and the liqueur into the melted chocolate and stir well with a rubber spatula.
In a saucepan warm the cream in low heat and then add it into the chocolate mixture and mix. Take off the heat and leave aside to cool.
When the pastry and the cream are cooled down, fill the tart with the chocolate mixture. Put in the fridge and leave until the filling is well set.
