Ingredients (for 3-4 people):
3 chicken breast fillets, cut in bite-size pieces (no skin)
10 dried prunes, pitted
10 dried apricots, pitted
200 ml of red dry wine
50 ml of olive oil
1 sprig of fresh rosemary (or 1 tsp dried, well crushed***)
salt
pepper
Method:
If the fruits are really big then cut in half.
Warm a heavy-bottomed wide pot on high heat. When it is ready add the oil and the chicken. Sauté until they are golden brown on all sides.
Pour over with the wine and add in the pot the rosemary, the dried fruits and season with salt and pepper. Turn the heat down to medium and cook until the chicken is cooked through and most of the liquids are gone while just a thick-ish sauce is left in the pot.
Check if the chicken is ready and if it is necessary add just a bit of water and continue cooking for a few more minutes.
*** If dried rosemary is used then add it in the food just 1 minute before cooking is over.
