Ingredients (for 4 people):
4 fillets of fresh salmon
2 tbsp of olive oil
2 red onions, cut in thin slices
1 pinch of granulated sugar
1 tbsp of finely snipped dill
1/2 tea-cup of white dry wine
salt
pepper
Method:
Put the oil in a deep and wide frying pan and warm on medium heat. Add the onions, stir, cover with a lid and cook for about 15 minutes until they are translucent.
Place the fish on top of the onions, pour over with the wine, season with salt and pepper and cover with the lid. Turn the heat to medium-low and simmer (basically, the fish cooks with the wine's steam) for 10-12 minutes. By then, the fish should be ready and the onions softened.
In the end sprinkle on top with the dill and check the seasoning. The small quantity of the sauce left in the pan should resemble a thick oil/lemon salad dressing.
Prepare your mashed potatoes in your usual way adding butter and single cream to the mixture.
Serve the fish along with the mash, pouring with the onion sauce and sprinkling on top with some extra dill.
