Warm potato salad with sausage and peppers

It is a salad but it is so filling that it could be easily served as a light meat on its own! Rich in flavours, ingredients and colours it is a great idea to use left over baked or boiled potatoes from the day before. Try not to overcook the onion and the peppers, they are always better to feel in the mouth this subtle crunchiness. The idea of boiling the potatoes in the beginning is because afterwards they will not absorb too much oil while frying and they will remain crispy on the outside and moist inside

Ingredients (for 4 people):
15 small potatoes, skin on (or larger cut into chunks)
½ tea-cup of olive oil
3 Sprng onions, finely chopped
3 bell peppers, cut in cubes (1 green, 1 red, 1 yellow)
2 country style sausages, cut into rounds
2 lemons, the juice
½ a bunch of rocket leaves, roughly chopped
salt
pepper

Method:
Boil the potatoes in salted water for 15 minutes on medium heat. Drain in a colander.

In a spacious non-stick frying pan warm the oil on high heat and sauté the sausage, the potatoes, the peppers and the Spring onions for about 6-7 minutes, stirring with a wooden spatula until they get a nice colour.

Pour over with the lemon juice and transfer into a salad bowl. Mix in the rocket leaves, season with plenty of pepper and serve.
