Recipe of Vassilis Kallidis,

Ingredients (for 15 breads):
700gr. of white bread flour (strong)
4 tbsp of olive oil
1 tbsp of salt
1 tsp of granulated sugar
2 sachets of dried yeast
about 450 ml of lukewarm water
3 red apples, cut in thin slices and/or rings
about ½ tea-cup of light brown sugar
ground cinnamon

Method:
In a large bowl put the flour, the oil, the salt, the granulated sugar and the yeast. Add the water little by little while at the same time stirring the ingredients with your hand. Start kneading with both hands now and when the dough starts to come together you will know if more water is needed. *** If the water is more than it should be then add some more flour to balance things out. At the same time gather the ingredients stuck on the sides of the bowl bringing them to the centre.

Knead the dough for 5-6 minutes and when all the ingredients are well blended transfer the dough on a clean surface lightly dusted with flour. Continue kneading harder with your fists, pressing with force. Every now and then fold the dough in two, as if closing a book. Give to the dough a nice round shape, dust with some flour and transfer into a bowl. Cover with a clean kitchen towel and leave to rest and raise for 30-40 minutes.

Preheat the oven to 200°C. Line with baking paper a large oven tray.

When the dough is ready for the first time, divide it into (about) 15 small balls. Stretch each one with your fingers into thin discs. Arrange the dough discs on the tray, cover with a clean kitchen towel and leave to raise for 15-20 minutes.

When the dough is ready for the second time arrange the apple slices (and rings) on them pressing a bit so to sink into the dough. Sprinkle each bread with the brown sugar and put in the oven.

Bake for 15-20 minutes. Take them out of the oven and while they are still hot, sprinkle with the ground cinnamon and serve.
